    Caramel square

    Shortbread base

    • 1⅓ cups Coconut flour
    • 1/2 cup Maple syrup
    • 1/2 cup Melted coconut oil

    Date Caramel layer

    • 20 Medjool dates
    • 3 tbsp Coconut cream
    • 1 tsp Vanilla

    Chocolate topping

    • 200 grams Dark chocolate
    • 1 tbsp Melted coconut oil
    1. Soak dates in warm water for about 15-20 minutes.

    2. Combine coconut flour, maple syrup and coconut oil.

    3. Drain the dates and blend in a food processor (or blender).

    4. Add coconut cream and vanilla, blend until smooth.

    5. Line a baking tray with parchment paper.

    6. Spread the shortbread crust on the tray, pressing firmly

    7. Spread caramel layer next and cool in refrigerator.

    8. Melt chocolate and coconut oil, then pour evenly over caramel layer.

    9. It will take about 1 hour to set.

    10. Enjoy!

    Lemon Berry Cheesecake

    Base layer

    • 1 cup pecans
    • 1 cup pitted dates
    • 1 pinch salt

    Cheesecake layer

    • 1½ cup cashews (soaked for 15 minutes in boiling water)
    • 1/4 cup lemon juice
    • 1/3 cup melted coconut oil
    • 2/3 cup tinned coconut milk (full fat version)
    • 1/2 cup honey(or maple syrup if vegan)

    Base mixture

    1. Blend dates into a paste in food processor, then set aside.

    2. Top tip: If the dates are abit dry, soak in hot water for 10 minutes before blending.

    3. Blend pecans into a meal in the food processor. Then put dates back in (with a pinch of salt) and blend until it forms a slightly sticky ball. 

    4. Press a tbsp of base mixture into muffin cases. Top tip: It’s easiest to use the silicon muffin cases.

    Cheesecake mixture

    1. Blend the filling ingredients in a high-speed blender until very smooth. Refrigerate tinned coconut milk overnight and then scoop the cream from the top.

    2. Top tip: The extra coconut liquid is brilliant in smoothies. 

    3. Divide filling evenly among the muffin cases. Then add a tsp of wild berry honey or your favourite topping if vegan. Tap the muffin tin to release air bubbles. Then freeze until firm.

    4. If using the silicone cases, they should pop right out. They will keep in the freezer for about 2 weeks. Enjoy frozen or thawed. Yum!

    Dry ingredients

    • 3/4 cup plain flour
    • 1/3 cup whole wheat flour
    • 1/2 tsp baking soda
    • 1/8 tsp salt
    • 4 tbsp sugar, divided

    Spices

    • 1 tsp cinnamon
    • 1/8 tsp ground pepper
    • 1/8 tsp allspice
    • 1/2 tsp ground cloves
    • 1/2 tsp ground ginger

    Wet ingredients

    • 6 tbsp unsalted butter
    • 1/4 cup molasses
    • 3 tbsp brown sugar
    • 1 large egg
    • 1/2 tsp vanilla
    1. Preheat oven to 180° (with fan).

    2. Set aside 1 tbsp sugar in shallow dish.

    3. Combine flours, baking soda and salt.

    4. Melt butter and stir in spices, let cool slightly.

    5. Combine wet ingredients, then mix all ingredients together.

    6. Roll dough into 1 tbsp, dip in sugar and place on baking tray sugar side up.

    7. Bake for 10-12 minutes. Let cool on tray for about 10 minutes then transfer to wire cooling rack.

    8. Enjoy!

    Hello everyone! I’m Krystal, the founder of Table. Reflecting on recent events, I’ve decided to embrace whatever lies ahead with a positive mindset and innovative spirit.

    The Last Event and Immediate Plans – Business Pivoting

    My last event booking for the immediate future was cancelled on the 16th of March. Unsure of my next steps, I began deep cleaning my house and tackling long-neglected projects. One afternoon, I took out my sewing machine and spent hours mending clothes, feeling like I had a new wardrobe by the end of it!

    Business Update and Government Relief

    Unfortunately, the self-employment and other business relief from the government isn’t applicable to me, and it seems that Universal Credit (even short-term) isn’t an option either. As a newer business owner, I find myself overlooked by these measures.

    Business Pivoting to a Delivery Service in Northern Ireland

    Given the current situation, pivoting my business direction seems the most viable option. I’m working on the idea of a delivery service for the self-isolating, the elderly, those with special dietary needs, or anyone looking for a break from cooking. More info on this will be coming soon!     Sharing More Recipes and Videos

    I also plan to post more recipes, including kids’ recipes, on my website. I love seeing so many people experimenting with baking and cooking recently, and I encourage inviting your kids into the kitchen to help.     Reflecting and Finding Faith

    While taking time to slow down and reflect, I’ve been thinking about relaxing into this time. Fear won’t change anything, but faith can change us from the inside out.     • 1 cup buckwheat flour
    • 1 pinch salt
    • 1/2 tbsp baking powder
    • 1/2 tsp baking soda
    • 2 tbsp maple syrup

    1. Mixed together and let to sit for 15 minutes.
